Chakra Balancing Kale Salad
This recipe is inspired by one of my favorite restaurants in NYC, Hillstone. I tried their kale salad and craved it immediately after. Once I get hooked on a salad I make it on repeat. This is my go-to salad for the whole week, for a holiday party, for friends’ dinner, etc. Plus, it’s hearty, literally. It’s full of so many colors and nutrients which is why I am coining it my Chakra Balancing Kale Salad. Food is a way to nourish our Chakras and balance them.
Chakras are the main energy centers in the body that affect us physically and emotionally. There are 7 wheels that are constantly spinning. When blocked by inner or outer sources, our energy is affected. The key is to balance them and be aligned, knowing which chakra is blocked and needs support. Eating for your chakras is so powerful and nourishing. See below for how eating the rainbow from this recipe helps each chakra.
The cayenne pepper and peanut in the salad dressing and the olive oil for massaging the kale are great for our Root Chakra (grounding).
The orange carrots help balance and energize our Sacral Chakra (creativity, joy).
The kale + cilantro connects to our Heart Chakra (self-love and compassion). Green foods are the most neutralizing and purifying color in nature. Massaging your kale is also great for digestion.
The cashews, vinegar, and lemon are great for your Solar Plexus (Self-worth, confidence).
Lemons and honey (in the dressing) are great for your Throat Chakra (speaking truth). Remember to eat slowly and mindfully.
The purple cabbage balances our Third Eye Chakra (intuition).
Finally, the Crown Chakra (Spirituality, connection to source) craves detoxifying ingredients and nourishing foods, which is why this recipe is perfect. Just like the Throat, it’s important for the Crown to eat mindfully and slowly.

1 Large Mixing Bowl
1 Small Mixing bowl
Ingredients
For the salad
1 Bunch Organic kale
1 Bag Organic Slaw Mix
1 Avocado
1 Cucumber
1 Cup Cashews Chopped
1/2 Bunch Cilantro
For the dressing
2 Tbsp Peanut Butter
1 tsp. White Wine Vinegar
1/2 cup Honey Mustard Dressing or Dijon Mustard + Honey
1 Tbsp. Coconut Aminos or Soy Sauce
1 tsp. Cayenne pepper
1 tsp S&P
1/2 Lemon squeeze
Instructions
For the salad
Wash and dry kale
Cut Kale into shredded pieces
Wash and dry coleslaw mix
Add Kale to mixing bowl and massage with oil for 5 minutes
Cut cucumbers into the desired size
Cut cilantro and add to kale mix
Add coleslaw mix, cucumbers, avocado, and cashews to kale salad
For the dressing
Mix all ingredients together
Blend until desired consistency
Pour over salad
Add grilled chicken if desired
